The soup you really want to try this summer. There are so many nutrient benefits. Each ingredient has a gut benefits and contains elements that are good for the skin. Avocados help protect against UV radiation. Onion, spinach, cilantro, cumin, lime juice and carrots contain phytonutrients that help protect the skin, and help with specific skin conditions like acne, eczema and psoriasis. And the gut helps with all skin issues, allowing it to be radiant. Try it. You like it.

Serves 2 as the main part of a meal

Serves 4 as an appetizer

2 avocados, peeled and pitted

2 cups bone broth* or chamomile tea*

2 tbsp chopped white onion (1/2 inch pieces to make it easier to measure)

1/2 cup sauerkraut, drained

3/4 cup baby spinach leaves, washed

2-3 tbsp cilantro leaves, washed

3/4 tsp ground cumin 

2 tsp raw honey

2-3 tbsp fresh lime juice (adjust to taste)

Sea salt and pepper to taste

2 tbsp lightly roasted cashews, (whole or pieces)

1 carrot, grated (purple or orange)

Place the avocados, broth or tea, onion, sauerkraut, spinach, cilantro, cumin, honey, and lime juice in the blender and blend until smooth. More tea or broth can be added if too thick. Season with sea salt and pepper to taste. Pour into two bowls and top with grated carrot and cashews. Serve

Soup can be made up to a day ahead and chilled. Add cashews and carrots when serving.

*Bone broth can be purchased at your local health food store and many grocery stores. If using chamomile tea: Bring 2 cups of water to boil and pour onto the chamomile tea bags. Let steep for 30 minutes. Remove tea bags before adding to other ingredients to make the soup. Both bone broth and chamomile tea are good for gut health.

Tip: To make it more of a meal: Serve with sourdough toast. Also, roast or grilled chicken pieces can be added or cooked legumes. Actually, anything can be added that seems right for you.
